Pectinase is a general term for enzymes that break down pectin, a polysaccharide substrate found in plants’ cell walls.
Pectinases are actually a mixture of enzymes, which, along with others such as cellulase, are widely used in the fruit juice industry where they are widely used to help extract, clarify and modify fruit juices. They are also used as an animal feed supplement, and as a nutraceutical.
