Isomerase

  • Isomerase are group of enzymes that catalyses the isomerization changes in a molecule, thereby aid in the conversion of a chemical compound from one isomeric form to another.
  • They are the largest subfamily of B12-dependent enzymes found in bacteria, which play important roles in fermentation pathways.
  • Glucose isomerase lowers the activation energy for the conversion reaction to occur. It is used to convert glucose into fructose to exploit the greater sweetness of fructose over glucose and sucrose.
  • High-fructose corn syrups (HFCSs) are prepared by enzymatic isomerization of glucose syrups.
